Quick and Easy Quiche Lorraine isn’t as intimidating as you’d like to think. Quiches are just actually frittata lovingly made with crust. It’s basically just eggs, bacon, butter and flour!

I love preparing pies and quiches because it freezes so well and i could put any of my other leftover on the pies, such as diced chicken, spinach, and other vegetables on the fridge!

This Quiche Lorraine will be a family favorite as it is very versatile, you can easily add ingredients with this, such as cooked chicken, or ham or even beef!

How do you store this? You can store this simply cooking this, let it cool then wrap it and freeze. Reheating this is simple. Thaw it in the fridge overnight and heat it up again in the oven or microwave!

I usually do a few of this pies so I would have enough prep for a few days!

If you are feeling a bit intimidated with making a pie you can take comfort in knowing you are very much in control of what you are putting in the pie!

Ingredients

Pie Crust:

  • 1 1/2 cup flour
  • 1/2 cup butter
  • 6 tbsp iced water

Filling:

  • 1 cup diced bacon
  • 1/4 cup chopped onion
  • 5 eggs
  • 1/4 cup cream
  • 1 cup chopped baby spinach
  • 1/2 capsicum diced
  • 2 tsp paprika
  • 2 tsp vegetable stock powder
  • 1 cup grated cheese

Instructions

Make the pie crust by blitzing butter with flour until it resembles crumb. Add water so that it forms together. Place in the fridge for an hour.
Pan fry bacon until crispy then add onion until it becomes translucent. Set aside.
On a clean bowl, mix eggs, cream, paprika, capsicum, cooked bacon and eggs. Add half of grated cheese and set this aside.
Cook pie and place on 23 cm quiche tin (you can also use other pie tins but it’s easier to use the quiche tin as you can move the bottom once this is cooked). Bake at 180C/356 F for 40 minutes until crust turns golden brown. (you can place baking beans on top so your crust doesn’t rise up or you can prick the bottom with fork instead)
Place all the filling then bake again for 20-25 minutes until middle part is set! Put remaining cheese on top and grill for a few minutes until cheese melts/
